做法(fǎ ):春笋切成(chéng )片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺(sháo )油(yóu ),放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
