做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片,葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油(yóu ),放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
