做法:春(chūn )笋切成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖(gài )大(dà )火煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
