做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
