做法:春笋切(qiē )成片(piàn )后(hòu )加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
