做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时(shí )盖上锅盖焖。
