做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅(guō )盖焖。
