做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅(guō )盖焖。
