做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖(gài )大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
