做法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖(gài )焖。
