做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅(guō )烧热(rè ),倒入(rù )2勺油,放入(rù )生(shēng )姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
