做法(fǎ ):春(chūn )笋切成片(piàn )后加少许盐捞出后用(yòng )清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后(hòu )转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
