做法:春笋切成片(piàn )后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
