做法:春笋切成(chéng )片后加少许盐(yán )捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
