做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
