做(zuò )法:春笋(sǔn )切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
