做法:春笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
